The buron is a stone building which they find in the pasture which the stockbreeders of valley had and exploited in a seasonal manner in the mountains of Cantal, Lozčre and Monts Dore, as well as on the trays of Aubrac in Aveyron in XVIIIth and XIXth centuries. Burons served for lodging the farmer being in charge of herds and of the manufacture of the cheese (the salers, the saint-nectar) during the estive (from mid-May to mid-October)
